Why does your blood test show negative for gluten sensitivity, but you still have issues when eating wheat products?
Gluten is one of many parts of the wheat that one can have a sensitivity to and you must be properly tested for the sensitivity. Nearly all major labs only test for IgA and only test for gliadin. This is not the correct way of fully determining a wheat allergy. The lab must test for IgA, IgG, and possibly IgM. The lab also must test for ALL parts of the wheat, not just gliadin IgA. Most individuals are not sensitive to gliadin, but are sensitive to other parts of the wheat. Also, if you have been truly gluten free for 3 months or more you must eat wheat products several times within 2 weeks of the blood test.

If you think that you are sensitive to wheat, it is highly suggested that you get a blood test for wheat sensitivity to determine if you are sensitive and which part you are sensitive to. It should also be noted that certain individuals are able to eat wheat grown and processed outside the United States and have no immune reaction, this is may be due to how we store the wheat or possibly if the wheat grown in the US is a GMO product.
Unfortunately the industry mislabeled wheat sensitivity with gluten allergy, and went further to mislabel foods as gluten free instead of wheat free. Don’t think gluten free, think wheat free. One can no longer think that one has a food allergy, but think that one has a food sensitivity.
Why it is important to know if you have a food sensitivity?
Food sensitivities cause immune cells to be produced, these immune cells can cause inflammation, autoimmune triggering, destruction of tissues with similar protein structure to the food, and more. Recent research has shown a link between cerebellar tissue destruction and gliadin (a protein found in wheat) sensitivity due to the fact that the body sees the cerebellar tissue proteins as gliadin proteins and will attack those tissues, this is much the same as when one gets strep throat and later the body attacks the heart valves as the proteins in strep are the very similar to the proteins in the heart valves. There are several studies that have found links to food sensitivity and autoimmune issues, so it is important to avoid the food that one is sensitive to when you have an autoimmune disease no matter whether it is gluten or any other food.
Understanding Gluten and Wheat Protein Sensitivity
Gluten is only one of several parts of the wheat grain that one can be sensitive. A food sensitivity is different from a food allergy in that different immune cells are produced and the reaction time is quite different. A food allergy typically causes an immediate reaction or a reaction within 4 hours of ingesting the aggravating food. A food sensitivity might cause an immediate reaction if the body is primed, but usually causes a delayed reaction that occurs within 3 days, this usually does not include a digestive symptoms. Testing for a food allergy involves a skin test or a blood test for IgE cells. On the other hand, testing for a food sensitivity requires that the food be ingested periodically for 2 weeks then a blood test for IgA and IgG immune cells. A skin test cannot determine a food sensitivity. Several research studies have shown that certain individuals will only produce one type of immune cell, such as IgG only, this is why one must test for all immune cells involved.
